Our New Chef

Vito Martucci, our Chef , is from Puglia, a country in the southern part of Italy .
A sunny and rough land, surrounded by the sea, Puglia produces the best olive oil of Italy along with a superb wine and a great variety of fish.
From Puglia, Vito gives us the recipe "Orecchiette alla Pugliese con salsiccia ":
"Sausage, Broccoli, Orecchiette pasta, Olive Oil, Parmesan or Pecorino cheese, grated.
Puncture the sausage, cover with water and put in the oven at 400. After 20-25 minutes took out and let it cool then cut in lumps.
Cook the orecchiette in boiling water. Drain.
Bleach the broccoli in boiling water for 2-3 minutes. In a pan, put olive oil, garlic, pepper, add broccoli and sausage, let it flavour, add the orecchiette, mix everything together. Serve with grated parmesan or pecorino cheese. |
